Roast Tomato and Smoked Bacon Soup
Ingredients
40g butter
8 tomatoes roasted
1 onion
1/2 leek
2 celery sticks
3 garlic gloves minced
2 stock cubes
100ml double cream
100ml balsamic vinegar
150g smoked bacon
Method
1 - In an oven tray place the tomatoes with the balsamic vinegar and a place of salt and sugar, roast in the oven at 200 degrees for 20 minutes.
2 - In a saucepan saute of the smoked bacon, onion, celery and garlic in butter.
3 - Add the tomatoes to the saucepan with the stock, cubes and simmer for 40 minutes.
4 - Add the double cream and blend.
5 - Add a pinch of sugar and taste for seasoning.
