Patricia talks about her recipe for a beautiful smoked mackerel pate that you can make in 10 minutes.
Smoked Mackerel Pate
Preparation time 10 minutes
Serves about 6-8 as a starter
2 smoked mackerel (4 fillets) skinned
½ tub Philadelphia cream (full or half fat cheese) (more if the fish tastes too strong)
1 tabsp. Melted butter
2 tablespoons tomato puree
A little lemon juice (1 teasp.)
Put everything in a mixer and process until smooth. Put in the fridge so that the butter solidifies and the mixture binds.
Serve with French or sourdough bread. Also good with brown bread.
Doesn’t freeze well because the fish becomes more oily in flavour.

The move would cost €650m, deliver little to no improvements in access for public patients, and would really only benefit private hospitals. We ask why it's being considered at all.

Patricia Casey starts off her new show, which will be showing you how to cook delicious, nutritious meals that can be cooked quickly, with a slow cooked Lamb which can be prepped in 10 minutes, perfect for dinner parties.
Patricia’s Lamb
Allow more than ½ lb per person (it shrinks in cooking and everybody loves it).
Preparation time 10 minutes
Serves 4
2 lbs. lamb cubed
2 tabsps. soy sauce
2 tabsps. tomato ketchup
2 tabsps. honey
2 tabsps. chutney or pickle
2 teasps. Worcester sauce
1 teasp. made English mustard (not essential)
Put lamb in boiling water until it turns brown – a minute or so. Remove, drain and add all the ingredients. Cook in oven (160-170 degrees) for about 2-2 ½ hours. Check from time to time so that it doesn’t dry out. Serve with rice and a green salad.
Doesn’t freeze well.
